Our philosophy
We do not trade in volume. Each season the woodlands of Piedmont give only so much, and we offer it to a small circle of chefs, restaurants and hotels who understand exactly what they are holding.

N° 01 — The White Truffle
The white diamond of Alba.
Tuber magnatum Pico has so far resisted commercial cultivation. It is found in the wild, by a hunter and a trained dog, in a few short months between autumn and winter. Its perfume (honey, hay, garlic and wet earth) is impossible to imitate and gone within days.

N° 02 — The Black Truffle
Depth, cocoa and forest floor.
The Winter Black Truffle, Tuber melanosporum, is the chef's truffle: firm, deeply veined and generous with heat. It holds its character through gentle cooking and rewards infusion into butter, sauces and stocks.

The season runs from late September to January, at its finest just as Dubai enters its busiest months. Kitchens that reserve early choose first.
